I appear on local TV cooking shows highlighting authentic Louisiana Foods. I have tracked the Louisiana “red” crawfish from the rice fields of the Bayou Country to the rice fields of Northern California. I have brought the local media right to the rice fields of Northern California to the boiling pots of my festivals using Louisiana seasoning and people to cook em up while teaching thousands how to “pinch tails and suck heads”
